Orange Blossom Cake

The fluffiest cake ever!
Ingredients:
7 eggs (4 whole eggs, 3 egg whites)
170g coconut sugar
75g sunflower oil
40ml orange blossom water
250g flour
10g baking powder
Process:
Let’s make the fluffiest cake with orange blossom! This recipe yields 1 large cake. Before we begin, let’s blend 170g of coconut sugar in a blender until any lumps are broken down.
In a large bowl, combine 4 whole eggs, 3 egg whites, and 170g of coconut sugar. Beat them using an electric mixer or a hand mixer with wire beaters for about 20 minutes on high speed until the mixture becomes very fluffy.
Then reduce the mixer speed to medium and gradually add 75g of sunflower oil (we want a very neutral oil for this specific cake), followed by 40ml of water infused with orange blossom.
Remove the mixture from the mixer and gently fold in 250g of sifted all-purpose flour in 3 batches, mixing with very gentle movements. It’s very important to add it in 3 batches to keep it fluffy.
Finally, add 10g of baking powder, gently mix it, and then transfer the mixture to the baking dish of your choice. Bake at 180 degrees Celsius for about 30-40 minutes. The cake is ready when it’s been at least 30 minutes and a knife inserted into the center comes out clean. Enjoy your delicious cake!
