Lemon Orzo

Let’s make the fastest and easiest lemon orzo in 10’!

Ingredients:

  • 500g orzo

  • 1 finely chopped onion

  • 200g canned coconut milk

  • Salt

  • Pepper

  • 100g shredded parmesan

  • Zest & juice from ½ lemon

Process:

In a pot, we boil the orzo. Remember to reserve some water before straining it. Meanwhile, in a pan, we heat some olive oil and add 1 finely chopped onion, sautéing it until it softens. Once it has softened, we add 200g of canned coconut milk and mix. At this point, we add a little salt and pepper. After straining the orzo, we add it to the pan and immediately pour in the reserved water. Then, we add 100g of shredded parmesan and mix well. We continue by adding zest & juice from half a lemon. We mix very well and serve! If you want it to be very lemony, then add juice and zest from a whole lemon instead of half. Enjoy!
