Chocolate Tart

In a large pot, heat olive oil over medium heat.
Add chopped ginger and cumin and sauté until soft.
Add the onions, sweet potatoes, carrots and pour boiling water until all the vegetables are covered in water.
Cook with the lid on until the carrots are tender, 20 to 30 minutes.
With a stick blender, blend all vegetables until smooth.
Once all vegetables are blended, add 400ml coconut milk and stir well.
